Welcome to Maria's! You are about to experience Santa Fe home cooking as it was 60-years ago. The enchiladas, the chile rellenos, the tamales, everything on the menu maintains the authenticity created by the original Maria!
When a server at Maria's asks, "Red or Green," they are repeating the question which has been asked since 1950, at the very same spot on Cordova Road. Of course, they refer to the New Mexico grown red or green chile (by the way, did you know that red chile is the same chile as the green, but has been allowed to ripen).
Maria's opened on the Santa Fe Fiesta weekend in 1950. The original Maria would cook at home, bring it in and sell everything as take-out. The next year Maria and her husband, Gilbert Lopez, added a patio, but it rained every day, so the next year they covered the patio. That old original covered patio is what we call The Cantina, today.
Al and Laurie Lucero purchased Maria's in 1985 and continue to operate the restaurant, together, every day. They are the fifth owner, and, by far, the longest-term operators.
A good deal of Maria's outstanding success has been prompted by their signature cocktail, the Margarita! Not only can you choose from over 180 hand-poured, hand shaken, 100% agave margaritas, you can sample any of the over 165-plus tequilas in a three-tequila-tasting-flight of half-ounce tastings served in Reidel Tequila Tasting Glasses. Al has written three books on tequila and margaritas, the latest, "The Great Margarita Book, Second Edition," published by Random House, is approaching sales of 150,000 worldwide.
