Executive Chef Martin Heuser and local barbecue champion Russ Muehlberger introduce bison barbecue dishes

KANSAS CITY, Mo. (July 23, 2015) – A month after Affäre launched its first bison menu of the year, Executive Chef Martin Heuser and local barbecue champion Russ Muehlberger combine their expertise to create barbecue bison dishes for the restaurant’s second round of bison.

Heuser and Muehlberger use naturally raised, prairie grass-fed buffalo from Lazy D Heart Ranch, a small Flint Hills ranch outside of Westmoreland, Kansas, to create their barbecue bison dishes. The pair spent a weekend smoking the bison together and creating a variety of barbecue sauces by combining Heuser’s German cooking techniques with Muehlberger’s more than 25 years of experience in barbecue. 

Muehlberger has received numerous awards for his barbecue skills, including three time American Royal Barbeque Contest Grand Champion, Missouri State Barbeque Champion and two time Greater Kansas City Chef Association Chef of the Year winner. 

All new items are now available while supplies last. New menu items include:

Appetizers 

Polynesian Style Bison Satay- $15

Spicy peanut sauce, cashew-mango slaw

BBQ Bison Maultaschen- $14

Stuffed ravioli, spinach, bison broth, caramelized onions

Bison & Barley Soup- $8

Bison, pearl barley, root vegetables, bison broth 

Mains 

Bison Ribeye Steak and Rib- $36

Smoked ribeye steak, barbecued bison rib, mustard-Horseradish BBQ sauce, lyonnaise potatoes, smoked onion, corn wheels, sweet carrots

Bison BBQ Sampler- $24

Burnt ends, brisket, smoked bacon wrapped, meat and cheese balls, pit beans, green apple-cranberry slaw 

Bison Cook-out- $24

Bison burger and brat duo:

Bison Burger, marinated bison patty, Swiss cheese, spicy sherry mayonnaise, egg-bun, hand-cut fries

Smoked bison brown ale brat, sweet potato purée, blueberry-corn salsa 

Polynesian bison BBQ- $20

Polynesian barbecue bison, peach-jalapeno salsa, fried curry-rice, scallion, pineapple BBQ sauce

Bison Schnitzel- $22

Bison top round, breaded schnitzel, smoked onion-Sherry cream sauce, potato salad

Located in the heart of the Crossroads Arts District, Affäre is Kansas City’s home for authentic contemporary German cuisine. Owned and operated by Germany-natives Martin and Katrin Heuser, the restaurant features a lunch, dinner, Sunday brunch and full bar with authentic German beers on tap. Martin leads the kitchen, combining experience working in his family’s centuries-old inn in Germany and classical chef training to create a contemporary menu unmatched in the area. Katrin, a certified sommelier, operates the restaurant’s wine program and also manages the restaurant’s operations. The restaurant is open Tues.-Thurs. 11:15 a.m. – 10 p.m., Fri. 11:15 a.m. – 11 p.m., Sat. 5-11 p.m. and Sun. 10 a.m.-2:30 p.m. During the Kansas City streetcar construction, Affäre is closed on Mondays.
