WHAT:

The SALO Series, a traveling, sociocultural dining project by Filipino Chef Yana Gilbuena, is popping up at Boheme for a 2-month test kitchen residency beginning March 29, 2016, bringing back the Montrose neighborhood bar’s popular “Test Kitchen Tuesdays.”  Every week, Yana will introduce a new snout-to-tail menu concept called HAYOP, engaging local farmers and producers, rotating local meats and greens from Texas farms 

“Hayop” means “animal” in Tagalog or Filipino. Snout-to-tail, also known as, nose-to-tail is “a philosophy of eating and cooking that involves using every possible part of an animal and thus minimizing waste.” (Source: MacMillan Dictionary)

Yana thrives on traveling and spreading culture through shared Filipino meals she prepares, often served “kamayan” style (traditional Filipino method of eating with one's hands). In 2014, she embarked on a 50-week pop-up dinner tour across the 50 U.S. states, and wrapped up the Canadian provinces in 2015. Chef Yana started the Latin America Tour in January 2016 but had to postpone due to unforeseen circumstances. The Latin America Tour will resume in June 2016.

Self-taught Filipino Chef Yana Gilbuena thrives on traveling and cooking Filipino food. ABOUT BOHEME

Drawing inspiration from over 20 years of traveling, owner and Houston Native, Morgan Holleman carefully crafted this cozy hot spot to showcase the art, culture, and flavors he most adored from around the world. 

The refurbished historical building is nestled in Montrose and surrounded by a 6,000 square foot garden adorned with Shona stone sculptures from Zimbabwe. Inside, authentic steel frame windows, original brick walls, cozy couches, and antique light fixtures from Germany, France and England grace the space with a subtle old world vibe. Famed artist Michael Winn, of last year's Illumination Project at the Rothko Chapel, personally created a stunning stucco accent wall using traditional Venetian techniques. The bulk of Boheme's interior is filled with a sleek wrap around bar, made of wood and stone, that comfortably seats 40 people and encourages a unified atmosphere.
